Too much grease clogging pipes can damage the city’s sewer systems, clog sewers on neighbouring properties, among other related issues. That’s why the City of Winnipeg requires restaurant owners to install and maintain a grease trap. Fines for not having a properly installed and maintained one can range from $1,000 – $5,000, on top of damages you may be on the hook for if they trace them back to your property.
